便當排骨縮水 台鐵加強品質控管

　台鐵便當挨批縮水，台鐵指出，便當所使用的排骨是向國內具有「CAS優良食品」及「HACCP」認證的冷凍肉品工廠購買，生鮮排骨肉重量均以每片100公克±10公克為基準。

　台鐵解釋，由於生鮮排骨肉製作須經解凍、敲打按摩、裹粉油炸、香滷過程，所以排骨肉血水、面積會逐漸消失，成品會因肉品部位的不同，有少許的耗損或減重。面積較大的肉品放入80元以上的餐盒中，面積較小的肉品放入60元的餐盒中，日後為保持排骨肉之標準品質，餐旅服務總所將持續要求5個餐務單位加強品管，以維持排骨肉品質一致性。
